RECIPE: Chicken & Dumplings Soup #Sobrecitos #Spon

Looking for a yummy recipe to get your writing juices flowing without weighing you down? I have one! Chicken and Dumplings soup is a golden oldie dinner entree since I was a kid. My mom used to make this once a week and I remember savoring every spoonful, saving the biscuits (da BEST!) for last! I recently signed up to participate in the new Mazola Sobrecitos packets campaign and was asked to come up with a recipe. I knew right away I wanted to make chicken and dumplings! Here's the recipe:

Ingredients:
1 whole chicken
Large pot
Mazola®Sobrecitos™ bouillon packets, chicken flavor
Salt and pepper
2-3 sliced carrots
Bisquick and milk

Directions:
Place whole chicken in pot and cover with water. Boil until cooked. Save the broth. Remove chicken and shred. Add shredded chicken into broth. Add carrots. Mix in two packets of Mazola®Sobrecitos™ bouillon packets.   Let simmer on medium.

This is what the biscuit batter should look like.
Now prepare the biscuits according the package directions. Add salt and pepper to the biscuit mix. Drop teaspoonfuls of biscuits into the soup. They will sink to the bottom, but will float to the top as they cook. Let cook for about 30 minutes. Makes about 4 servings.

Now - about the bouillon packets. Loved them. One packet equals one normal cube, and they are made with sea salt as opposed to table salt. I liked that you don't have to worry about the spices breaking down like you do with traditional bouillon cubes. That's a big deal for me because I actually bit into one along time ago and will never forget the experience, lol! I'm not the keenest chef, so the packets are such a easy, fool-proof method. I could also see using one with hot water to make a quick broth soup. They also have a tomato version that I want to try with my mom's Spanish rice recipe!
